  • This enzyme was able to release flavor compounds, such as geraniol, nerol, and linalol, from the corresponding monoterpenyl-beta-D-glucosides in a grape must (pH 2.9, 90 g of glucose liter-1) [1].
  • Biological tests were also performed on the major pure components of L. angustifolia Mill. essential oil: linalol and linalyl acetate as determined by GC and confirmed by GC-MS [2].
  • A number of other glycosides were detected and the structures of some of them, mainly apiosylglucosides and glucosides with aglycones in higher oxidation state than linalol, were tentatively identified using the mass spectra of their TMS and TFA derivatives and the results obtained from the analysis of their aglycones [3].
